Forecasting Healthy Options for a Fast Casual Restaurant Chain 

Challenge

A fast casual restaurant known for offering quick, healthy food developed a new line of healthy products to add to their menu. 

To justify the entry of the options the client needed to forecast their volumetric and revenue potential.

Approach

  1. We conducted a quantitative survey utilizing M/A/R/C®’s ASSESSOR® forecasting system, a validated approach used across industries.
  2. We sampled customers and non-customers who live within the restaurants’ trade area to measure the expected levels of sales for the new items and gauge from which items the new products sourced volume. 
  3. Early adopters and likely consumers of the products were profiled, and product ‘health attribute’ strengths identified to inform targeting communications.

Outcome

  • The client utilized the results of the research to bring the new healthy line of products to market.
  • The volume projections helped the fast casual restaurant to optimize its ”Limited Time Offer” (LTO) calendar and informed right-sizing ingredients and food purchasing for the stores. 
  • In-market sales reflected the sales short to medium projections provided.
