Forecasting Healthy Options for a Fast Casual Restaurant Chain
Challenge
A fast casual restaurant known for offering quick, healthy food developed a new line of healthy products to add to their menu.
To justify the entry of the options the client needed to forecast their volumetric and revenue potential.
Approach
- We conducted a quantitative survey utilizing M/A/R/C®’s ASSESSOR® forecasting system, a validated approach used across industries.
- We sampled customers and non-customers who live within the restaurants’ trade area to measure the expected levels of sales for the new items and gauge from which items the new products sourced volume.
- Early adopters and likely consumers of the products were profiled, and product ‘health attribute’ strengths identified to inform targeting communications.
Outcome
- The client utilized the results of the research to bring the new healthy line of products to market.
- The volume projections helped the fast casual restaurant to optimize its ”Limited Time Offer” (LTO) calendar and informed right-sizing ingredients and food purchasing for the stores.
- In-market sales reflected the sales short to medium projections provided.
